1 tsp. Coconut oil
1 onion, chopped
a pinch of mustard seeds, black cumin seeds, onion seeds
1 stick of cinnamon
A bunch of celery
1 sweet potato
2 – 3 carrots chopped finely
parsley and green coriander
2 c cabbage, chopped (the part closer to the stem, it's more robust and 'heartier' for soups)
5 c water
turmeric powder, Aesofitida, black salt, coriander powder,
1/4 tsp. red chilli powder
sea salt, to taste
ground black pepper, to taste
Heat oil in a pan and sauté ginger, garlic and onion, until soft and fragrant.
Add seeds, cinnamon and all other spices, then add cabbage, carrots, potato, sweat potato, celery, parsley, coriander and stir fry on high heat for a couple of minutes to sear the vegetables.
Add water, red chilli powder and salt. Cover and bring to a rolling boil, then simmer until the vegetables are as soft, not mushy.
Blend all the vegetables and spices, and seasoning if necessary. Bring to simmer again and add fine chopped cabbage, carrots and other vegetables of choice. Continue until the vegetables are slightly cooked.
Serve steaming hot!
If you prepare the cabbage soup for a few days in advance, just add always some fresh when preheating. If gives a change to the taste and add some nutritional value
You can also blend all the ingredients of the soup and drink it for a change!
